This picture doesn't do the quesadilla justice, but I thought I would try. I found this Rachael Ray egg recipe in her magazine and my husband just loves it!!! Below is the jist of it:
Ingredients - tortillas, eggs, bacon, avocado (sliced or mashed), shredded cheese, black beans
- Fry up some bacon and break it into smaller pieces (usually between 4-6 pieces)
- Make some fried eggs (or eggs over easy, depending on if you like runny eggs or not) - I use 2 eggs for my quesadilla and three for my hubbies
- In the same pan that I fried the eggs, I melt butter and then throw one small tortilla in there
- On top of the tortilla, place some shredded cheese, the eggs, the bacon pieces, some black beans, more cheese and avocado slices, and then top off with another tortilla.
- I usually flip the quesadilla once (which can be difficult) so the cheese on both sides melts and holds it together. (Rachael actually folds the tortilla's in half to make one quesadilla, but we put too much fixin's on the inside to just fold over the bottom tortilla)
- Cut into quarters, and serve with salsa, sour cream, or guac
